👩🍳 How to make Andaman Fish Upma with Vegetables
- Toast semolina dry pan medium 2-3 min stirring continuously (pale golden, nutty aroma).
- Remove, set aside.
- Heat 2 tbsp oil pan medium (175°C).
- Mustard seeds if available (0.5 tsp) crackling (15 sec).
- Onions fry translucent (3 min, pale softening).
- Garlic-ginger (1 min fragrant).
- Carrot, beans, peas stir-fry 2 min (slightly softened, crisp).
- Turmeric, chilli, curry leaves, green chillies fry 30 sec (coat vegetables).
- Add flaked fish, stir gently (1 min heat through).
- Separate pot: water boil (500ml 100°C rolling boil).
- Add boiling water vegetable-fish mixture carefully (sputter), stir constantly.
- Add toasted semolina thin stream stirring rapidly (2-3 min prevents lumps).
- Reduce low (120°C), stir occasionally 4-5 min as thickens (thick upma, separate grains, no pudding texture).
- Add remaining 1 tbsp oil, stir gently (glossy).
- Taste adjust salt, cilantro fold in end.
- Transfer plate immediately.
- Serve hot with lemon pickle or tamarind chutney.
